Beans & Greens
Hearty & super-nutritious
Ingredients
- 1 TBSP EVOO
- 1 medium onion, diced
- 1 or 2 celery ribs, diced
- 8 garlic cloves, minced
- 8-oz mushrooms (any variety), sliced
- 1 Bunch Greens of choice, stems removed & chopped
- 2 15-oz cans cannellini beans with liquid
- 3 cups Organic Chicken or Vegetable Broth
- 1 tsp Dried Oregano
- 1 tsp Garlic Powder
- 1 tsp Dried Basil
- 1 tsp Kosher or Pink Himalayan Salt
- ½ tsp Black Pepper
Serves: 6
Directions
- Sauté the EVOO & onion in a large pot over medium heat for approximately 5 minutes or until onion is translucent.
- Add celery, garlic, mushrooms, greens, beans with their liquid, seasonings & broth.
- Bring to a boil and reduce heat. Simmer for 30 minutes.
- Serve with a healthy garnish of your choice!
