Grilled Salmon and Vegetables

A simple grilling dinner bursting with flavor

Ingredients

  • 4 salmon filets
  • 1 Tbsp olive oil with lemon, parsley and thyme for marinade
  • 1 Tbsp melted unsalted butter
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 dash of turmeric
  • Washed & trimmed Asparagus, Sliced Mushrooms, Baby Yellow Squash, and Red Pepper
  • 2 Tbsp olive oil, dash of oregano, thyme, salt, pepper
  • 2 cloves of garlic minced

Serves: 4

Directions

  1. Place the olive oil, parsley, thyme, turmeric, salt and pepper in a bowl. Whisk to combine.
  2. Place salmon in a raised dish and add marinade. Coat the salmon well.
  3. Marinate in the refrigerator for at least 1 hour.
  4. Preheat an outdoor grill or indoor grill pan over medium high heat. Add the salmon fillets and cook for 5-6 minutes on each side or until salmon is opaque throughout.
  5. Combine and toss all vegetables in olive oil, oregano, basil, pepper and minced garlic.
  6. Place on separate grill pan and cook for 10 minutes on medium heat.

Grilled Salmon provides a nice change of pace when you are looking for something different. Combining fish with a host of healthy vegetables makes a satisfying, flavorful dinner.
