Grilled Salmon and Vegetables
A simple grilling dinner bursting with flavor
Ingredients
- 4 salmon filets
- 1 Tbsp olive oil with lemon, parsley and thyme for marinade
- 1 Tbsp melted unsalted butter
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1 dash of turmeric
- Washed & trimmed Asparagus, Sliced Mushrooms, Baby Yellow Squash, and Red Pepper
- 2 Tbsp olive oil, dash of oregano, thyme, salt, pepper
- 2 cloves of garlic minced
Serves: 4

Directions
- Place the olive oil, parsley, thyme, turmeric, salt and pepper in a bowl. Whisk to combine.
- Place salmon in a raised dish and add marinade. Coat the salmon well.
- Marinate in the refrigerator for at least 1 hour.
- Preheat an outdoor grill or indoor grill pan over medium high heat. Add the salmon fillets and cook for 5-6 minutes on each side or until salmon is opaque throughout.
- Combine and toss all vegetables in olive oil, oregano, basil, pepper and minced garlic.
- Place on separate grill pan and cook for 10 minutes on medium heat.
Grilled Salmon provides a nice change of pace when you are looking for something different. Combining fish with a host of healthy vegetables makes a satisfying, flavorful dinner.
